Permanent position of research scientist on “Identification of cellular interactions involved in muscle construction in fish using organoids”.

The research carried out in the “Fish Growth and Flesh Quality” team on quality determinism shows that the proportions of muscle, fat and connective tissues are crucial for product quality. Understanding the mechanisms behind the crosstalk between these tissues is essential to ensure optimal and balanced muscle growth and to maintain the quality of fish products.

This recruitment will strengthen the team’s research on the interactions between muscle, fat and connective tissues with new skills based on the use of organoids obtained from trout cell progenitors.

The scientific objective of the profile is to identify the nature of the interactions between the main cell types of muscle. After developing muscle organoids, the candidate will be able to identify the key genes involved in the modulation of cell crosstalk.
